We only use fresh wild mackerel caught off the coast of eastern Hokkaido.

Mackerel raised in the cold, clean waters has firm flesh and is extremely fatty.

The fish is caught at Nemuro Port, close to the fishing grounds, and processed immediately to lock in its freshness.
