After many years of searching for safe, secure, and delicious brown rice, I came across this brown rice produced by Joint Farm.

 

Koshihikari is a Niigata-born variety of rice called "Koshihibuki," which is a relative of Koshihikari, and is carefully cultivated using fully matured plant-based compost.

It has a light and refreshing taste, good graininess, and a natural sweetness.

This rice is perfect for lunch boxes because it remains delicious even when cold.

This rice goes well with any Japanese, Western or Chinese dish, such as fried rice or risotto.

You can easily cook delicious rice using a regular rice cooker.

[Soil preparation sets us apart from other rice]

Joint Farm's Senryu and Gensen rice are distinguished from other rice varieties by the way the soil is cultivated.

When seed fir is soaked with water in the first spring, it uses minerals that humans need.

This mineral is a "natural mineral concentrate" that does not contain any organic matter, and it makes plants healthy, makes them less susceptible to bacterial diseases, and has a bactericidal effect against anaerobic bacteria and acid-sensitive pathogens, improving the living environment for aerobic microorganisms in the soil.

 

The "natural mineral concentrate" used by Joint Farm is a "fully matured plant-based fertilizer" made by fermenting fertilizer made only from plants (soybean pulp and tea dregs) to around 80°C using microorganisms.

 

"Fully ripened plant-based fertilizer" is a treasure trove of minerals necessary for humans, and there are dozens of types whose components are known.

Fertilizers usually include "animal fertilizers" made from the excrement of animals such as cows, chickens, and pigs, but much of the food given to animals today contains "hormones" to promote growth and many "antibiotics" to prevent illness.

 

In agriculture that emphasizes plant circulation, the excrement of animals that eat such feed is considered to be the same as using chemical fertilizer, and is therefore never used at Joint Farm.

 


[The secret to its deliciousness]

The light sweetness of koshiibuki rice and the grains that are easy to break apart due to their moderate stickiness are prominent, and although it is brown rice, it is soft and easy to eat.

These vegetables are carefully grown using safe and secure cultivation methods that significantly reduce the use of pesticides and chemical fertilizers.

[How to cook brown rice (example)]

Pressure cooker

Soak the brown rice in water for 2 to 3 hours.

Bring a mixture of 2 cups of brown rice and 3-3.5 cups of water to a boil and then simmer over low heat for 8-10 minutes.

Turn off the heat and steam for 10 minutes or more to make it fluffy.

 

Electric kettle

Soak the brown rice in water overnight.

Cook the rice using 1.2 to 1.3 times more water than usual.

 

Earthenware pot/Gas pot

Soak the brown rice in water for a few hours or overnight.

Bring 2 parts brown rice to 1.6 to 2 parts water to a boil, then cook over medium to low heat, being careful not to burn it.

If you steam it thoroughly after turning off the heat, it will become even softer.

 


[Tips for enjoying it deliciously]

The key to making brown rice even more delicious is the soaking time and the amount of water.

You can increase the amount of water to suit your taste or soak it for a longer time to make it fluffy and easy to eat.

 

By the way, in my house, I always germinate the rice in a thermostat at 50 degrees for 180 minutes before cooking it, and then eat it as germinated brown rice!

Using organic fertilizer and natural mineral concentrate, the crops are grown on microbially fermented plant-based compost, without any animal-based compost.

This brings out the natural flavor of rice while reducing the burden on the environment.

 

● Soil made with fully ripened compost derived from natural sources

The fully matured plant compost farming method, which makes use of the organic matter in plants, cultivates soil in which microorganisms are active.

By unleashing the natural power of nature, the rice becomes strong against anaerobic bacteria and pathogens, and by growing healthily using the rice's natural power, the rice grows with a strong sweetness and flavor and no unpleasant odor from the bran layer.

 

● Abundant meltwater and large temperature differences between day and night

Koshiibuki rice, born in Niigata, is a descendant of Koshihikari.

The mineral-rich meltwater brought by the heavy snowfall that is unique to Niigata and the temperature difference between day and night in summer are what make Koshihikari even more delicious.

 

● Fully ripe rice, not new rice

It is generally believed that new rice is the most delicious, but in fact it tastes better when it has been aged for about 1.5 months.

Joint Farm's Gensenmai rice becomes especially tastier and sweeter when aged.

This ensures that the flavor does not deteriorate until the next year's new rice is available.

As an aside, one of Japan's imperial court rituals, the harvest festival "Niiname-sai," is held on November 23rd, which is roughly 1.5 months after the new rice harvest.

Perhaps people in the past knew that aging makes food taste better.

 

● Kosher certified

It is Kosher certified, which is very rare for rice.

Kosher refers to the dietary regulations of the Jewish religion.

This is given to products whose ingredients and manufacturing processes comply with Jewish regulations.

The original purpose was to ensure that the food was safe for Jews around the world, but it is said to be based on stricter rules than other certifications because it is "safe due to strict hygiene management" regardless of religion.
