Item Description

Grilled fish, tempura, mizore hotpot -- with just a little effort, any ordinary dish can taste like it came from a traditional Japanese restaurant.

This bamboo grater is handcrafted one by one by bamboo artisans in Satsumasendai, Kagoshima.
This method produces soft and crisp grated radish that is airy without crushing the fibers, with a mild spiciness and the sweetness, aroma, and nutrition intact.
Tools made from natural materials bring out the life in ingredients.

What is a bamboo grater?

Grated radish is an indispensable supporting ingredient on the Japanese dining table.
However, using a regular grater can result in too much water being extracted or the flavor being too strong.
The bamboo grater uses a coarse blade to shave the rice without cutting through the fibers, resulting in a light, snow-like texture and a gentle sweetness.
Bamboo has the advantage of being a poor conductor of heat, meaning that flavor and enzymes are not easily lost due to frictional heat, allowing you to enjoy the "whole" of nutrients and flavor.
This product is made from selected Moso bamboo grown in Kagoshima Prefecture, which boasts the largest bamboo forest area in Japan, and each tool is individually crafted by the artisans at Yagi Bamboo Industry.
Our techniques, built up over nearly a hundred years in harmony with nature, will elevate your daily meals.

Features of the Oni Oroshi

Fluffy and crisp

The coarse blade makes use of the fibers, resulting in a light texture that does not turn into a paste.

Mild spiciness

There is minimal cell destruction, allowing the radish's natural sweetness and aroma to come to the forefront.

Less likely to lose nutrients

It does not release moisture easily and retains vitamin C and digestive enzymes.

The unique comfort of bamboo

Its low thermal conductivity preserves the flavor and provides a gentle warmth in your hands.

Various uses

It can be used on a variety of vegetables, including radishes, carrots, yams, potatoes, apples, and lotus root.

The reason it tastes delicious

Difference from a regular grater

A typical grater grinds the cells finely, which can easily release pungent components (isothiocyanates) and can also cause vitamins and enzymes to leak out along with the water.

Preserves fibers with a "scraping" motion

The bamboo grater uses a shaving motion to preserve the fibers and create grains that hold air. As a result, the rice is rich in sweetness, aroma, texture, and nutrition.

Material that reduces frictional heat

Bamboo does not easily transmit frictional heat, which prevents the denaturation of flavors and enzymes, resulting in a milder taste.

Recommended usage

Classic Japanese

Grilled fish topped with a heaping dollop of grated daikon radish and a few drops of soy sauce. It absorbs the fat just right and leaves a clean aftertaste.
Mizore Nabe: Even if you add a lot of it to the soup stock, it still retains its texture, making it a great receptacle for flavor.
Japanese-style hamburger: The delicious flavor of meat and the sweetness of grated daikon radish give you a satisfying feeling without feeling heavy.

Fun for the whole family

Apples and plain yogurt: A sugar-free morning dessert.
Potato Oyaki: Crispy on the outside and chewy on the inside. You can also mix in carrots and cheese.
Lotus root hamburger: Crisp and chewy texture makes it satisfying to eat.

Hospitality

Grated radish + whitebait + shiso leaves + high-quality ponzu sauce: a quick appetizer.
Steak condiment: absorbs fat and adds a sharp Japanese flavor.
Chilled tomato jelly with grated daikon radish: Refreshing in appearance and taste.

Tips on how to use it

- Shaving will be smoother if you move in one direction (pull towards you or push away).
- If you use the corners to hit it, you can grate it easily without using excessive force.
・We recommend eating radish with the skin on (the skin is rich in vitamin C). Wash it thoroughly before eating.

Maintenance

1) Immediately after use, rinse the fibers between the blades with water (you can use a scrubbing pad or soft brush).
2) Wipe off any moisture with a cloth and allow to dry completely in a well-ventilated place.
3) Avoid putting in the dishwasher, soaking for long periods of time, or leaving in direct sunlight.
*Bamboo is a natural material. A little effort is the key to making it last longer.

Frequently asked questions

I'm worried about mold.
There is no problem if you dry it thoroughly after washing. In humid seasons, dry it in the shade occasionally. Store it in a well-ventilated place.
Can I use it even if I'm not confident in my strength?
Once you get the hang of it, it's easy to do. Try it in one direction or on a corner. Root vegetables with little moisture are especially comfortable.

About Yagi Bamboo Industry

A century-old workshop that lives with bamboo

Yagi Bamboo Industry was founded in 1925 (Taisho 14) by the founder, Yagi Hitoshi, in Satsumasendai, Kagoshima.
Surrounded by bamboo forests, it began as a "bamboo training center" where local young people were taught the skills while making bamboo crafts that were useful in people's daily lives.
Bamboo is an indispensable material for agricultural tools, kitchen utensils, and everyday life, and Yagi Bamboo Industry was also a place to systematically pass on the wisdom and techniques behind it.

Yagi Takekogyo's workshop

A spirit passed down from generation to generation

The second generation continued to make "tools that support daily life" even during the chaotic times of war and post-war.
Even though resources were scarce, their attitude of not wasting a single bamboo and carefully crafting it earned them the trust of the people.
Now, under the leadership of third-generation owner Yagi Fuyuki, bamboo products have evolved beyond being merely household items, elevating their brand value as "traditional crafts" that embody the local culture of Kagoshima.
In addition, to spread the appeal of our products nationwide, we have opened a base in Tokyo and established a system to deliver our products directly to consumers in urban areas.

In recent years, there has been a growing global focus on sustainable living and a return to natural materials, and Yagi Take Kogyo's manufacturing resonates perfectly with this trend.
Bamboo is a renewable resource and a material that places little strain on the environment.
While staying in touch with the values of people who are sensitive to eco-friendliness and sustainability, we are creating a series of products that harmonize with modern dining tables and lifestyles.
By adding innovation to its century-old tradition, Yagi Take Kogyo has become a prestigious brand that connects "Japanese handcraftsmanship" to the next generation - this is the state of Yagi Take Kogyo, evolved by the third generation.

Bamboo products and craftsmen

Eyes and hands facing the materials

The Moso bamboo used by Yagi Bamboo Industry is a gift from Kagoshima, which boasts the largest bamboo forest area in Japan.
It takes several years to complete the process, from felling to processing, natural drying, curing, and finishing.
Craftsmen carefully examine the color, fibers, and node position of each individual piece of bamboo, making the most of each individuality to create the perfect tool.
Bamboo is a renewable resource, and proper thinning and utilization keep mountains healthy and support the circulation of satoyama.
Protecting this business is also an important mission for Yagi Take Kogyo.
Today's market is flooded with convenient overseas products.
However, it is extremely rare to find a workshop that uses domestically produced materials and continues to preserve "Japanese handicrafts" with the same attitude for nearly 100 years.
Rather than mass production, we work closely with each bamboo stalk and listen to the voice of nature as we craft our products.
This is where the value and sense of security of "Made in Japan" lies.
Holding a tool from Yagi Takekogyo is also an act of connecting the Japanese spirit of manufacturing, which is disappearing due to foreign products, to the future through the hands of a century-old company.
