The Story of Hakuougi Sake Brewery

Hakuougi Sake Brewery has been in business since the late Edo period in Kawabe Town, Gifu Prefecture.
In the 1960s, when cheap mirin-style seasonings were sweeping the market, the company maintained its traditional manufacturing methods, believing that "it would be better to go out of business by making the real thing than to survive by making a fake."

Representative Kato says:
"If someone asks me what mirin from the Edo period was like, I can confidently say, 'This is it.' Our mission is to pass on the authentic taste to our children and grandchildren."

Three Pure Ingredients

Domestic glutinous rice - The rich sweetness and umami of carefully selected domestic rice. Handmade rice koji - "Souhaze" koji, hand-grown by artisans day and night. Homemade rice shochu - All mirin ingredients are produced in-house, a rare sight in Japan.

90 days of brewing and three years of aging produce a smooth, mellow sweetness, rich body, and complex umami flavor.
