The traditional sea salt "Umi no Sei" made from the pure seawater of Izu Oshima has come together with domestic organic brown rice koji that is grown without the use of pesticides or chemical fertilizers.

The enzymes produced by koji mold bring out the umami of the ingredients, while salt, rich in natural minerals, adds a deep richness. This authentic fermented seasoning is delivered in a tube that can be squeezed with one hand.

This product is produced by Suya Shigeru Co., Ltd., a long-established brewery headquartered in Tateshina, Kitasaku District, Nagano Prefecture, just like the 3-year-aged miso we sell in our store. Umi no Sei's Special Manufacturing Method

  • Seawater is concentrated in a traditional three-dimensional salt field using the sun and a flat pot method, and then slowly crystallized in a flat pot, trapping all the minerals.

With the enactment of the Salt Industry Modernization Temporary Measures Act in 1972, Japan's traditional salt fields were completely abolished, and the only salt available in Japan was refined sodium chloride produced using ion-exchange membranes. Essential nutrients that play important roles in health, such as iron, copper, manganese, chromium, and zinc, were all removed.

In response to the activities of scholars and consumers, the "Edible Salt Research Committee" was formed, and a movement to revive natural salt began. In 1977, Japan's first sun-dried sea salt, "Umi no Sei Hoshi Shio (Blue Label)," was born on Izu Oshima, followed by the revival of traditional sea salt, "Umi no Sei Arashio (Red Label)," in 1984, reviving salt production using traditional methods. With the Salt Monopoly Act revised in 1985 and completely abolished in 1997, Umi no Sei products have become widely distributed throughout the country. Today, Umi no Sei offers a wide variety of salts made using a unique method that utilizes natural energy, contributing to the revival of a healthy and delicious food culture.
