This Golden Ichimi, from Ajiko, a long-established restaurant in Gion, Kyoto, is worthy of its name as the spiciest in Japan.
If you open the bag thinking it's just regular chili peppers, you'll be surprised.
This golden-yellow chili pepper has 10 times the spiciness of regular red chili peppers, and its clean, sharp spiciness is sure to become an addictive taste for those who like spicy food.
It has a mild flavor, so it can be used not only as a condiment but also as a base seasoning for cooking.
A small amount is enough for a noticeable spiciness.
In a book by Hiraga Gennai, a famous genius scholar in the mid-Edo period, illustrating the types of chili peppers cultivated in Japan, the author depicted a yellow chili pepper he named "sashiage."
This pepper is now called "Ougon" (golden). It is the hottest pepper in Japan, with 10 times the spiciness of red peppers (according to the Japan Food Research Center).
In the mid-Edo period, as many as 52 varieties of chili peppers were cultivated in Japan, but as more and more imported chili peppers came into the country at low cost, the decline of Japanese agriculture unfortunately continued, and today most chili peppers in circulation are imported.
Gion Miyuki is committed to using only domestically produced ingredients, and these rare golden chili peppers are grown on farms across the country.
