Miso has been one of the most important seasonings since ancient times.
Because it can be stored for a long time, miso can be said to be one of Japan's most outstanding ideas.
There are two types of commercially available miso: one that has been heated (pasteurized) to stop the fermentation, and one that is raw, unpasteurized, in which the koji mold is still alive.
Many of the active ingredients in miso are destroyed by heat, so to get the most out of it, it's best to choose raw miso.
The manufacturer, Suya Shigeru, was founded in 1892 (Meiji 25).
The soybeans, rice, wheat, and beans used to make the koji are all carefully selected, pesticide-free, domestically produced products, and they use sun-dried salt to make their miso and soy sauce using the traditional natural fermentation method, which has remained unchanged since the company was founded, and allows the miso to slowly mature in a natural manner.
